I wanted a nice cool salad for a quick lunch, so I made Curried Chicken Pasta Salad. This combined Chicken Salad with grapes, always a favorite of mine, with pasta salad. Brown sugar creates an added layer of flavor to the curry. Cooked chicken is added to a sour cream based dressing with curry powder added in, then celery and grapes are mixed with the chicken and pasta.
It came together very easily and I loved it! The girls didn't like it as well, I guess they didn't like the curry flavor, but my dad enjoyed it, so there was more for us!
"The Pioneer Woman Cooks" is pubished by William Morrow. It is $29.99.
